Today's featured recipe comes from Group B blogger, Amy of Amy's Cooking Adventures, who made Pesto Chicken Quesadillas from her assigned blog, Lemon and Cheese.
Amy had this to say about her recipe:
"I LOVE quesadillas! I love traditional quesadillas and I love to
play with flavors, so these were right up my alley! The quesadillas were absolutely delish! I mean, it’s pesto & cheese and
chicken! How can you go wrong?"

Spiralized Zucchini with Pesto, Tomatoes, & Corn: Mother Would Know
Today's featured recipe comes from Group A. Laura from Mother Would Know made Spiralized Zucchini with Pesto, Tomatoes, & Corn from her assigned blog, The Wimpy Vegetarian. I would love love love to have a spiralizer, but I am the worst for getting kitchen gadgets and never using them (I'm talking to you, pasta attachment for my KitchenAid). But on the other hand, zucchini noodles. Let's be honest, that's awesome!
Laura had this to say about her recipe:
"Although I wasn’t intentionally seeking to wean my husband from gluten, his surprise that zucchini could be such a great substitute for spaghetti made me smile. I think our experience will make Susan smile too."

Cream Cheese Pesto Dip: Renee's Kitchen Adventures
Today's featured recipe comes from Group A. Renee of Renee's Kitchen Adventures made Cream Cheese Pesto Dip from her assigned blog, BCMom's Kitchen. Oh my goodness gracious. I love pesto so much and I can't even grasp how delicious this dip must be!
Renee had this to say about her recipe:
"This lovely looking appetizer could not be any easier! In fact, there really are no measurements, just use as much of each ingredient as you like. I decided to put my own twist on it by swapping out the feta for chopped Kalamata olives and the tomatoes for sliced roasted red peppers."

Sweet Corn, Pesto, & Goat Cheese Pizza: Inquiring Chef
Today's featured recipe comes from Group A. Jess of Inquiring Chef made Sweet Corn, Pesto, & Goat Cheese Pizza from her assigned blog, Cupcake Muffin. I just recently tried goat cheese and it was on pizza. I have to say - I am a fan! Love that it also has corn and PESTO! Yum, pesto!
Jess had this to say about her recipe:
"In many years of homemade pizza-making, I’ve never made one with sweet corn, but it’s sort of a beautiful thing – a bit sweet and slightly caramelized from the high heat of the oven. And the fresh pesto and goat cheese make me pretty happy as well."
