and now I'm sharing it! Our most viewed recipe was Tortas de Chile Colorado de Res from Karen of Karen's Kitchen Stories.

"The beef is succulent, tender, and loaded with flavor. The chile
colorado is amazingly easy to make, and is also perfect for making
ahead. It can be served with beans, rice, and tortillas, or stuffed into
bolillo rolls or French rolls for pretty amazing Mexican sandwiches."

Green Chicken Enchiladas: Adventures In All Things Food
Today's featured recipe comes from Group A. Andrea of Adventures In All Things Food made Green Chicken Enchiladas from her assigned blog, La Cocina de Leslie. I've always thought green enchiladas are way better than red ones. I am intrigued by the differences from my go-to recipe, so I will definitely be trying Andrea's version she made from Leslie's blog

"They were gobbled up the first night. No leftovers. Is there a much better compliment than that? And luckily, since I have another 2 pans in the freezer, we have more Green Chicken Enchiladas in our near future."

Mini Chicken Empanadas with Cheese and Chiles: Karen's Kitchen Stories
One of today's featured recipes comes from a member of Group D. Karen of Karen's Kitchen Stories made Mini Chicken Empanadas with Cheese and Chiles from her assigned blog, Rainstorms and Love Notes. How cute are these little empanadas?! Karen notes that you can freeze them and bake when needed and that is a win to me. You don't have to rush to feed the crowd on game day!

"Fried" Ice Cream Pie: An Affair From the Heart
Today's featured recipe comes from Group B. Michaela of An Affair From the Heart made "Fried" Ice Cream Pie from her assigned blog, Renee's Kitchen Adventures. How gorgeous is this pie?! Michaela's family really loved this and it can be lightened up further with lowfat ice cream or even frozen yogurt. Regardless, it sounds like it tastes as incredible as it looks!
